In 2013, Tapatio Reposado is born, offering fans another way to enjoy this cult favorite. With its smooth and rich flavor, Tapatio Reposado can be savored on its own or used as a fantastic base for cocktails.
Production Process:
- Agave Harvest: The journey begins with Agave Piñas, harvested by skilled Jimadores.
- Baking: The Piñas are slowly baked for 4 days to develop deep, complex flavors.
- Crushing: After baking, the Piñas are crushed to extract the Mosto.
- Fermentation: The Mosto is fermented using an 80-year-old yeast culture.
- Distillation: Double-distilled in traditional Tequilano Pot Stills.
- Aging: The tequila is aged for 8 months (well beyond the required 2 months) in used Jim Beam American oak barrels, which impart notes of caramel, oak, and smoke.
- Finishing: The Reposado is lightly filtered and then bottled, preserving its rich character.
Tasting Notes:
- Flavor Profile: Caramel, oak, and smoke, ending with a smooth finish.
Accolades:
- 93 Points - Wine Enthusiast: "Tapatio's new expression has intriguingly savory, almost meaty flavors that seem a shame to hide beneath fruit juices."
- Distiller.com: "This is a fine example of a Reposado... It’s very subtle and easy to sip, without being over-oaked."
